Provence is a gastronomic region ~ lamb, fish & seafood, tomatoes, melons, cherries, grapes, zucchini, peppers & eggplant, garlic, herbs ~ and, last but not least, olive oil.

In the heart of Vallée des Baux , the first oléïcole municipality of France has about 80,000 feet of olive trees, and produces award wining olive oils classified as Appellation d'Origine Contrôlée ~ indisputably the essence of Provençal gastronomy.
