Thirty minutes east of Mont Ventoux, lavender fields forever surround the rocky-top village of Sault, which produces 40 percent of France's lavender essence and has good view cafés.
Generally lavender blooms late-June to late-July; and is harvested from late-July to mid-August. In the Drôme Provençale, northwest of Vaison-la-Romaine, lavender blooms as early as mid-June. We enjoy stepping onto a lavender farm and meeting firsthand with the producer, visiting the distillery, and then indulging in the flavors of lavender-theme cuisine to round out our experience. |
